His "last name" is Wales. His pilot uniform as well as education records indicate his last name is Wales.

I know most of you would challenge me, and say it is Mountbatten-Windsor, but this is NOT the last name that Prince William uses in his daily life.

While technically royals do not have a surname, William considers his last name to be Wales. The name "Windsor" is both a royal household name, and a surname for non-royal British male line descendants of Queen Victoria. So Prince William has 10 second and third cousins with the surname Windsor who are all commoners. He also does not think his surname is "Mountbatten-Windsor" since that name was reserved specifically for non-royal descendants of QEII and Prince Phillip. At the earliest one of those will be born in 25-35 years.

Since he considers Wales part of his name, and he will one day become the Prince of Wales when his grandmother dies, he is reluctant to assume another name. Hence his desire not to be made the Duke of Cambridge.

Members of the Royal Family do not have surnames. The name of the Reigning House is Windsor (changed from Saxe-Coburg and Gotha), but that's not their surname.

Currently, William and Harry are known as Prince William and Prince Henry of Wales (since their father is The Prince of Wales). Similarly, Princesses Beatrice and Eugenie are known as Princess Beatrice and Eugenie of York (since their father is The Duke of York). However, they ALL belong to the House of Windsor.

In private lives, all of the Queen and Prince Philip's children have used Mountbatten-Windsor as their last name (Prince Philip adopted the surname Mountbatten prior to his marriage: it's literal translation of the German Battenberg - his family's name). In official lives though, they are all bound to clearly state they belong to the House of Windsor-only, as per Act of 1952 (which basically states that anyone who wishes to remain the Line of the Succession must go under that name).

The family name is now Windsor due to the fact that the family were scared of the public anger due to them being of German ancestry so they renamed themselves Windsor,it is a good name for the queen,Windsor castle is built of stone somewhat similar to the compassion the queen shows to her subjects, and of course the defunct king Edward was a german sympathiser and a traitor to this country but treated and kept in luxury with his wife for all the rest of his life,in the first world war traitors were shot at the stake, pity we did not continue with this

Yes, his last name was Windsor, but they thought it sounded too German so they changed it to Mountbatten-Windsor.
